Chicken Kabob: Marinated cubed chicken with our spice blend, vinegar, lime juice or yogurt for a minimum of 24 hours. Baste the kabobs with ghee and grill.
Ground Meat Kabob: The kabob is made with well-pounded or well-minced meat that has been seasoned with lime juice and spices. The shami kabob may be cooked in a traditional oven or grill; better yet, baste the kabobs with ghee and fry in a pan.
Shish Kebab: Literally means skewered, grilled meat. Any kind of meat may be used; small cubes of fruit or vegetables are often threaded on the skewer as well.
Persia or Iran and its superb elegant culture has had influence over parts of Iraq, Afghanistan, Russia and even Turkey and India. The Persians have mastered the art of cooking with nuts, herbs and dried fruits to make stews served over rice and with flat breads. Saffron, pomegranates, mint, dill, fenugreek leaves, nuts, lamb, black limes, apricots, and barberries dominate Persian/Iranian cuisine. Its main dishes are grilled meats, rice, yogurt and slow-simmered stews.
